Ingredients

  • 1/2 kg chicken breast (cut into cubes)
  • 1/4 cup oil
  • 1 cup noodles, boiled
  • 1 tbsp ginger, chopped
  • 2 capsicum, cubed
  • 3/4 cup boiled potatoes, cubed
  • 1/2 cup spring onion, chopped
  • 1 cup cabbage, chopped
  • 1 onion, cubed
  • 3/2 tsp black pepper
  • 1 tsp salt
  • 1 tsp crushed red pepper
  • 1 tbsp soy sauce
  • 2 tbsp ketchup
  • 2 tbsp garlic sauce
  • 1 tbsp cornflour, dissolved in water

Method

  1. Heat oil in a pan and fry ginger. Add boneless chicken and cook for five minutes. Add all the vegetables and fry.
  2. Add the seasoning with half a cup fo water. When it comes to a boil, add the cornflour.
  3. In a dish layer fried rice, chicken, sauce, and finally the noodles. Garnish with green chillies, fried onion, and fried garlic.

Sauce Directions

In a bowl, mix the following to make the sauce:

  • 1/2 cup mayonnaise
  • 1/2 tsp crushed red chillies
  • 1/2 tsp chilli powder
  • 1/4 tsp salt
  • 1 tsp sugar
  • 2 tbsp vinegar
  • 2 tbsp ketchup
  • 2 tbsp garlic sauce
