Ingredients
- 2 tbsp red curry sauce
- 1 tbsp ginger garlic paste
- 1/2 cup tomato paste
- coconut milk
- basil leaves
- 1 tbsp brown sugar
- 1 lemon’s juice
- salt
- fried beigan
- green chillies, fried
- prawns
- 2 tbsp cornflour
Method
- Heat oil. Add red curry sauce and ginger garlic paste. Fry for a while, then add tomato paste. Cook for five more minutes before adding coconut milk, basil, brown sugar and salt.
- Marinate prawns in salt and cornflour. Fry.
- Add fried beigan, green chillies, and prawns to the sauce.
