Ingredients

  • 1 lb mutton with bone (1-2 inch pieces)
  • 1 tsp salt
  • 1 tbsp fresh green chillies, ground
  • 1 tbsp fresh ginger, ground
  • 2 tsp fresh garlic, ground
  • 8 oz coarsely chopped onion
  • 4-5 glasses of hot water
  • *4 sticks cinnamon
  • *10 black peppercorns
  • *1 tbsp white whole cumin seeds
  • *1 tsp whole coriander seeds
  • *6 whole cloves
  • 8 oz (250 grams) green tomatoes, crushed
  • 6 tbsp oil
  • fresh chopped coriander

Method

  1. Put the meat into a pan and add the salt, fresh chillies, ginger, garlic, onions, and water. Bring to a boil and simmer covered on low heat for 50 minutes (or cook in cooker).
  2. Add the * items, cook uncovered and dry off all excess liquid on high heat.
  3. Add tomatoes and oil and cook uncovered on medium heat for 7-10 minutes.
  4. Reduce to low heat and keep it there until oil separates.
  5. Add the chopped coriander and simmer, tightly covered, on low heat for ten minutes.
