Badam Burfi Recipe - Almond Burfi by Archana's Kitchen Description, some other stuff

Ingredients

  • 1/4 kg almonds (soaked overnight)
  • 3/4 liter milk
  • 250 grams oil
  • 1 cup water
  • sugar to taste

Method

  1. Peel and put almonds in a blender with milk. Grind gently to make a smooth paste.
  2. In a pan, dissolve sugar in water and boil for 10 minutes until quantity is halved. Add the almond paste, stirring frequently. Simmer mixture for one and half hours until it thickens.
  3. Heat oil in antoher pan, then add a little oil to almond paste, stirring continuously until oil is absorbed by the paste. Repeat this process until all the oil has been absorbed and paste becomes glossy.
  4. Spread the paste in a 11” x 7” x 3/4” dish.
  5. As it cools and starts setting, cut into squares (or diamonds!)
  6. Cool in the refrigerator.
